Ok, so in all of my previous automatics I have always swapped the converter for really loose "think Jenna Jameson" torque converter.
Does anyone still do this? A decent handmade converter will add many smiles while retaining lockup on the highway. Any they are only a few hundred bucks...
My 1991 Roadmaster wagon has a 2200 rpm stall, and the 2002 SS has a 3800 rpm stall, and they both launch hard

I remember Summit used to have a range of lockup ranges/tightness, but I haven't checked recently and don't really know much about boutique builds. I do know if I were ever to build a V-10 Modular Panther, it'd have a custom TC for launch purposes rather than going the T-5 route. A custom valve body as well, obviously.

Not sure about this, but can you have a high-stall converter that offers full lock-up once you're cruising?

It varies with the make of converter and stall rpm, to am extent. I've heard of guys having converters up to 2700-2800 rpm that were pretty civil, but usually, 3000 rpm+ = no lockup while cruising.

I only do in race cars. The added heat from the loose converter is going to kill your trans early without additional cooling and temp monitoring. I just don't want to put that into a DD, but if you add the additional cooling, why not?

I added a poor man's trans cooler- I cleaned out a newer junkyard A/C condenser and i run it in series with the factory trans cooler. In summer Tampa traffic my trans fluid will top out at 190 degrees

Ah, I didn't word that correctly. Can't you have a high-stall converter and then also have electronic lock-up? Seems to me that would be the best of both worlds.

Yes you can, I have a Vigilante brand 3,500 rpm stall and it has lockup. It is becoming more common with the later overdrive transmissions.
